Use Those Leftovers For Tasty Meals This Week

The guests have gone home and you’re staring at a refrigerator packed with leftover wings, dips, and party platters. If you hosted a Super Bowl gathering this year, you know the feeling—equal parts satisfied and overwhelmed. But before you resign yourself to eating the same snacks for days, let’s talk about transforming that game day surplus into delicious weeknight meals that’ll make you grateful you over-shopped.

Breakfast: Start Strong

Those breakfast items from your morning kickoff spread? They’re your secret weapon for easy weekday mornings.

Loaded Breakfast Burritos (10 minutes)
Scramble some eggs and wrap them in tortillas with leftover bacon, sausage, breakfast potatoes, and cheese. Add a spoonful of leftover salsa or pico de gallo for brightness. Wrap individually in foil, and you’ve got grab-and-go breakfasts for the entire week. They even freeze beautifully—just reheat in the microwave for 90 seconds.

Game Day Hash (15 minutes)
Dice up any leftover breakfast potatoes, roasted vegetables, or even pizza into small pieces. Sauté in a hot pan with a little oil until crispy. Create wells in the hash and crack eggs directly into them. Cover and cook until the eggs are done to your liking. It’s a one-pan wonder that transforms random leftovers into something special.

Lunch: Midday Solutions

Brown-bagging it has never been easier when you’re working with quality ingredients that are already prepared.

Buffalo Chicken Wrap (5 minutes)
Shred leftover buffalo wings (yes, even boneless nuggets work) and toss with a little ranch dressing or blue cheese. Wrap in a large tortilla with lettuce, tomatoes, and any leftover celery sticks you chopped for the veggie tray. The combination of cool, crisp vegetables with spicy chicken is incredibly satisfying.

Nacho Bowl (10 minutes)
Skip the soggy chips and turn your leftover nacho toppings into a grain bowl. Start with rice or quinoa as your base, then layer on refried beans, seasoned ground beef, cheese, guacamole, sour cream, and salsa. Add fresh lettuce or cabbage for crunch. It’s basically a burrito bowl that makes excellent use of everything you already have.

Slider Remix (15 minutes)
Those leftover slider buns and pulled pork, meatballs, or brisket? They make fantastic sandwiches for lunch. Toast the buns, pile on the protein, and add a simple coleslaw made with bagged cabbage mix and any ranch dip you have left. The creamy slaw cuts through rich meats beautifully.

Dinner: Evening Victories

After a long day, the last thing you want is a complicated cooking project. These dinners come together in minutes.

Pizza Frittata (15 minutes)
This might sound unconventional, but trust us. Chop leftover pizza into bite-sized pieces and fold them into beaten eggs with a little milk. Pour into an oven-safe skillet and bake at 375°F for 12-15 minutes until set. The crust becomes wonderfully crispy, and you’ve just made a protein-rich dinner that uses up pizza nobody wants to eat cold.

Dip-Turned-Pasta Sauce (15 minutes)
Many creamy dips make excellent pasta sauces when thinned with a little pasta cooking water or milk. Buffalo chicken dip over penne? Delicious. Spinach artichoke dip tossed with bowtie pasta and grilled chicken? Absolutely. The key is cooking your pasta, reserving a cup of the starchy water, then stirring in the dip until it reaches sauce consistency.

Kitchen Sink Quesadillas (10 minutes)
Quesadillas are the ultimate leftover solution. Place a tortilla in a dry skillet, sprinkle with cheese, and add any combination of leftovers—shredded chicken, black beans, corn, peppers, even crumbled chips for extra crunch. Top with another tortilla, flip when golden, and serve with leftover guac and sour cream.
