Look for Me in the New York Times!
Please check out Pete Wells’ latest column in the Sunday Times magazine. In it he wrestles, humorously, with mise en place, a term that comes, he writes, “from a French phrase meaning ‘make the new guy do it.'” Happily enough, I agree with Pete that mise en place has got to go – at least if you’re cooking at home and not in a restaurant. In fact, I dispensed with mise en place entirely in Sara Moulton’s Everyday Family Dinners — and discuss exactly why in Pete’s column.
