Golden Pumpkin Gem Cookies

We’re ‘throwing out the first pitch’ in our Daily Tailgate Recipes with these sweet little things we served for dessert at Tuesday Lunch. They were such a hit that we decided we’re going to make them again Saturday morning to sell in our Kitchen ShoPumpkin Cookiep. So, stop by for a fresh one, or pick up a dozen for your team at home!

Golden Pumpkin Gem Cookies

  • 1 cup sugar
  • 1 cup canned pumpkin
  • ½ cup shortening
  • 1 tablespoon grated orange peel
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup golden raisins
  • ½ cup walnuts, chopped

Golden Butter Glaze

  • ¼ cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1 to 2 tablespoons heavy cream

Preheat oven to 375 degrees.  Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking powder, baking soda, cinnamon and salt. Stir in raisins and walnuts.

Drop cookie dough by teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.

While cookies bake, melt butter for glaze in 1-1/2-quart saucepan on medium heat. Add powdered sugar and vanilla, then stir in heavy cream until smooth.CCKC Loves Baseball

Remove cookies to cooling rack and top with glaze.

Makes 4 dozen cookies.
