- 2 tablespoons butter, unsalted
- 1 yellow onion, finely chopped
- 1 carrot, finely diced
- 1 stalk celery, finely diced
- 3 pounds ground beef
- 2 tablespoons garlic powder
- 1 cup of your favorite BBQ sauce, plus 1 to 2 cups more for basting
- Salt and freshly ground black pepper to taste
Heat butter in a skillet over medium heat. Add onions, carrots, and celery and sautÃ© until soft. Transfer to a mixing bowl. Add the beef, garlic powder, BBQ sauce, salt, and pepper. Mix well and place in a loaf pan.
Set up your smoker to burn at 225 degrees, and smoke the meatloaf for 2 hours, uncovered. Remove and finish in a 350 degree oven until internal temp reaches 165 degrees on an instant-read thermometer. Baste with additional 1-2 cups of BBQ sauce for a nice crust.Â Let rest for 10 minutes, then slice and serve.Â Makes 4-6 servings
