That Meatloaf Was Smokin’ Good!

Can you see the red ‘smoke ring’ at the top of that meatloaf?  Mmmm-mmm. That’s because our friend Larry The BBQ Dude spent Monday smoking our meatloaf for Tuesday Lunch this week. Talk about flavorful!!  Try this recipe for your family at home. Smoked Meatloaf

  • 2 tablespoons butter, unsalted
  • 1 yellow onion, finely chopped
  • 1 carrot, finely diced
  • 1 stalk celery, finely diced
  • 3 pounds ground beef
  • 2 tablespoons garlic powder
  • 1 cup of your favorite BBQ sauce, plus 1 to 2 cups more for basting
  • Salt and freshly ground black pepper to taste

Heat butter in a skillet over medium heat. Add onions, carrots, and celery and sauté until soft. Transfer to a mixing bowl. Add the beef, garlic powder, BBQ sauce, salt, and pepper. Mix well and place in a loaf pan.

Set up your smoker to burn at 225 degrees, and smoke the meatloaf for 2 hours, uncovered. Remove and finish in a 350 degree oven until internal temp reaches 165 degrees on an instant-read thermometer. Baste with additional 1-2 cups of BBQ sauce for a nice crust.  Let rest for 10 minutes, then slice and serve.  Makes 4-6 servings
