Halloween = Soup Night

Halloween

Halloween holds a special place among holidays, as it celebrates the neighborhood. And, for the better part of two decades, our Halloweens have been spent at our dear friend Kathy’s house, just down the street from us. From the time our daughter was very small (she’s in college now), we took her trick-or-treating around the neighborhood, ending at Kathy’s house.  While Devin and her friends headed to the basement to wheel and deal on trading their favorite candy loot, the adults gathered upstairs and enjoyed Kathy’s legendary Minestrone Soup and White Chicken Chili.

The trick-or-treating and candy trades are a thing of the past, but we adults still gather at Kathy’s for soup and time with friends every year at Halloween. I always look forward to these chilly fall evenings!

Kathy agreed to share her Minestrone Soup recipe on our Kitchen Talk blog. She recommends making it a day ahead of when you plan to serve it. Not only does it make your party-day prep easier, it lets the delicious flavors of the soup really intensify.  Enjoy!

Minestrone Soup

Ingredients
Minestrone Soup
1 pound Italian sausage, sliced
Olive oil, for frying
1 cup onion, diced
2 garlic cloves, minced
1 cup carrots, diced
2 small zucchini, diced
1 (16oz) can Italian tomatoes
2 cups beef broth
2 cans white kidney beans (cannellini beans)
1 cup dry red wine
Salt and freshly ground black pepper, to taste
Parmesan cheese, for topping
 
Preparation
Brown sausage in olive oil. Discard all but a small amount of oil and sauté the onion and garlic. Add carrots, zucchini, tomatoes and broth.  Simmer for one hour. Add beans and wine. Simmer about 20 minutes.
