Happy diners braved the rain for our Pop-Up Lunch this week. They clearly considered it worth dodging the raindrops to celebrate National BBQ Month with some Award-Winning Pulled Pork Sammies topped with Larry’s Famous BBQ Sauce and Mango Coleslaw and served with Pasta Salad and Apple Crumble. So delicious! And so reminiscent of lazy summer days.
Larry ‘The BBQ Dude’ Hadley had a lot of requests for the recipe for his Mango Coleslaw. It’s quick and easy to make, and your guests will enjoy the perfect combination of sweet and tangy, with just the right amount of kick. See below for the recipe.

Mango Coleslaw
INGREDIENTS
3 tablespoons apple cider vinegar
3 tablespoons mayonnaise
2 tablespoons honey
2 tablespoons canola oil
1/2 teaspoon celery seeds
1/2 teaspoon salt
Freshly ground black pepper to taste
1 (10-12oz) pkg coleslaw mix
1 ripe mango, peeled, cut into 1/2-inch pieces
1/3 cup cilantro leaves, chopped
1 small jalapeño, seeded, diced
PREPARATION
In a large bowl, combine vinegar, mayonnaise, honey, oil, celery seeds, salt and pepper until smooth and creamy. Add coleslaw mix, mango, cilantro and jalapeño and gently stir to combine. Cover and refrigerate for 1 hour. Make approximately 4 cups.
