This week at Tuesday Lunch at The Culinary Center, we’ll offer our take on Chicken Spiedini. We’ll top this flavorful dish with a classic Amogio sauce and pair it with some great accompaniments to round out our little trip to Little Italy.
Culinary Definitions:
Spiedini comes from the Italian word spiedo meaning spit and referring to cubes of meat cooked on a skewer. Amogio is a traditional Sicilian sauce and marinade used to accompany chicken, fish and pasta. It’s light and tangy, easy to make and freezes well so your family can always have some on hand. .
